Old-Fashioned Hard Sauce
INGREDIENTS:
1/2 cup (1 stick) salted butter, softened to room temperature
1 1/2 to 2 cups powdered sugar (confectioners' sugar)
2-3 tablespoons brandy (or dark rum or whiskey, if you prefer)
1 teaspoon vanilla extract (optional)
INSTRUCTIONS:
Cream the butter: Beat the softened butter with an electric mixer (or by hand with a wooden spoon) until light and fluffy, about 2-3 minutes with a mixer, longer by hand.
2. Add sugar gradually: Add the powdered sugar 1/2 cup at a time, beating well after each addition. Start with 1 1/2 cups and add more if you prefer it sweeter.
3. Add spirits: Beat in the brandy (or rum or whisky), one tablespoon at a time, to your taste preference. Add the vanilla, if using.
4. Whip until fluffy: Continue beating until the mixture is light, fluffy, and well-combined, about 2 more minutes.
5. Chill and shape: Transfer to a serving dish or roll into a log shape in parchment paper. Refrigerate for at least 2 hours until firm.
6. Serve: Let it sit at room temperature for 5-10 minutes before serving so it's spreadable but still holds its shape. Place a dollop on warm mince pie or any other of your favorite holiday desserts!
